Maya’s Pesto Pasta Recipe

 

 

Recently my daughter has been showing a lot of interest in cooking.  When I am making dinner, she likes to help with mixing ingredients and pushing the buttons on the mixer. Since she was a baby, Maya has always loved pesto. We’ve been making it so long, she now takes the lead when it is pesto night. It’s such an easy and delicious recipe and we put it on everything. Pesto pasta, pesto rice, pesto toast, pesto salmon..(Forest Gump voice). I eat a primarily PALEO diet, so pesto is a great addition to grilled chicken and vegetables for a nice change-up.

I love Maya’s help in the kitchen, she can even teach me a thing or two. **We modify the original pesto recipe, by eliminating the pine nuts and using vegan cheese.

Pesto Recipe

Basil – 2 Cups

Italian Parsley- 1 Cup

Go Veggie Parmesan – 1/4 cup

365 Olive Oil – 1/2 cup

Lemon Juice – 1/8 cup

Large Garlic – 2 cloves

Sea Salt – ( a couple pinches)
